Ingredients
- 4 whole medium sized pears such as bosc 16.2 oz/460after peeling and de-cored
- 2 cups of moscato wine or other sweet fruity white wine, 500 ml/480 grams
- 1 cup of granulated sugar 200 grams
- 2 tbsp of honey
- 1 vanilla bean
- 1 star anise
- 3 cloves
- 1 small stick of cinnamon
- 1/4 cup more of moscato wine 63 ml/60 grams
- 2 tbsp of potato starch or cornstarch
- 2 cups of heavy cream 465 grams, or half-half if you prefer
