Ingredients: 4 whole medium sized pears such as bosc (16.2 oz/460after peeling and de-cored); 2 cups of moscato wine (or other sweet fruity white wine, 500 ml/480 grams); 1 cup of granulated sugar (200 grams); 2 tbsp of honey; 1 vanilla bean; 1 star anise; 3 cloves; 1 small stick of cinnamon; 1/4 cup more of moscato wine (63 ml/60 grams); 2 tbsp of potato starch (or cornstarch); 2 cups of heavy cream (465 grams, or half-half if you prefer)
