Ingredients
- 1 cup yellow split peas soaked overnight
- 1 tsp garlic chopped
- hot pepper, scotch bonnet to taste, minced
- 1/2 cup flour all purpose
- 1 tsp baking powder
- 1 tsp cornstarch
- 2 tsp ground cumin or garam masala
- 1/4 cup water
- 2 cup spinach, fresh finely chopped, packed
- 2 tsp cilantro chopped
- salt to taste
- oil for frying

- Gather ingredients
- Drain peas and rinse until water runs clear. Drain well.
- Put into food processor with garlic and pepper. Puree until it is a fine grainy paste
- Add flour, baking powder, cornstarch, cumin large bowl, and mix well.
- Mix pea mixture and water with the flour mixture and stir well.
- Add spinach, cilantro and salt to the flour pea mixture. Cover and set aside for 1 hour.
- rub some oil on hands so mixture won't stick.Take portions slightly larger than golf balls and shape into 1/3 to 1/2 inch thick disks.
- Heat oil on medium heat and fry in batches browning on both sides {about 4-5 min per batch}
- Drain on paper towels
