Ingredients

cup
yellow split peas
soaked overnight
1
tsp
garlic
chopped
hot pepper, scotch bonnet
to taste, minced
1/2
cup
flour
all purpose

tsp
baking powder
1
tsp
cornstarch

tsp
ground cumin
or garam masala
1/4
cup
water

cup
spinach, fresh
finely chopped, packed

cilantro
chopped
salt
to taste
oil
for frying
Instructions
Gather ingredients
Drain peas and rinse until water runs clear. Drain well.
Put into food processor with garlic and pepper. Puree until it is a fine grainy paste
Add flour, baking powder, cornstarch, cumin large bowl, and mix well.
Mix pea mixture and water with the flour mixture and stir well.
Add spinach, cilantro and salt to the flour pea mixture. Cover and set aside for 1 hour.
rub some oil on hands so mixture won’t stick.Take portions slightly larger than golf balls and shape into 1/3 to 1/2 inch thick disks.
Heat oil on medium heat and fry in batches browning on both sides {about 4-5 min per batch}
Drain on paper towels
