Ingredients
- 1/4 cup yellow onion finley chopped
- 3 whole limes juiced ~ 1/4 cup
- 1 lb shrimp, cooked medium, peeled and deveined
- 2 whole roma tomatos finely diced
- 1 whole cucumber seeded and diced
- 2 whole jalapeno peppers seeded and finely diced
- ground salt & pepper to taste
- 1 1/2 cup clamato juice
- 1 cup ketchup
- 2 tsp Lemoncello™ Hot Pepper Sauce Blacklick® Spice Company
- 1 bunch cilantro remove stems and chop
- 2 whole Avocados firm, peeled, pitted and diced

Instructions
- in small bowl mix onion and lime juice Let stand for 10 Minutes
- In separate non reactive bowl add shrimp tomatoes, cucumber, jalapeños, salt and pepper. mix together.
- Add clamato juice ketchup, and Lemoncello® to onion mixture and mix.
- Add juice mixture to shrimp mixture bowl. Stir to blend. Add Cilantro and Avocados. mix again
- Cover and chill for at least 1 hour
