- 2 lbs red potatoes quartered
- 1 Tbsp Onion minced
- 2 Tbsp parsley minced
- 1/2 tsp salt
- 1/4 tsp black pepper

- gather ingridents
- preheat oven to 375 F. Melt butter in large baking dish in oven
- toss potatoes and onions in butter to coat. bake in preheated oven until potatoes are tender and slightly crispy around edges.
- sprinkle parsley over potatoes and season with salt and pepper. toss and serve
