Thai Green Papaya Salad

  1. Whisk first 7 ingredients in medium bowl. Set dressing aside.
  2. Cook beans in medium saucepan of boiling salted water until crisp-tender, about 5 minutes.
  3. Rinse under cold water.
  4. Cut into 2-inch pieces.
  5. Using julienne peeler, peel enough papaya to measure 6 cups.
  6. Place in large bowl.
  7. Add tomatoes, cilantro, green onions, chile, and green beans. Pour dressing over; toss.
  8. Sprinkle peanuts over and serve.
